We are releasing the first of our 2019 Sauvignon Blanc Pét-nat. Short for Pétillant Naturel, it was originally used in Limoux in the south of France in the early 16th century by winemaking monks. Other traditional sparkling wines, like Champagne, add sugar and yeast to dry, still wine in order trigger a second fermentation and produce bubbles.
This Pet Nat has notes of star fruit, apricot, lychee, elderberry, guava and kiwi in the aroma. This sparkling wine, made from Sauvignon Blanc grapes, is currently off-dry, with an acid balance and a mouthwatering finish. A living product, it will continue to ferment for months to come and evolve over time in bottle.
